Benton’s Smoky Mountain Country Hams are slow cured using salt, brown sugar, and sodium nitrite and typically aged 9-10 months, though hams are available 1 year and older. This time-honored practice dates back to the era of our forefathers, when the preparation and preservation of meat was a way of life and sustenance.
Although the hands of time and technology have sculpted many aspects of our modern world, Benton’s Smoky Mountain Country Hams has upheld the traditional dry-curing process and are striving to produce world class country hams and bacon.
Our business was started in 1947 by the late Albert H. Hicks, a dairy farmer who began curing and selling country hams out of a painted block building. Allan Benton and his employees have honed the dry-curing of hams and bacon into a culinary art and have catapulted the products from a simple breakfast mainstay into the world of gourmet cooking, where they have been praised for their characteristic flavor.
In 1940, Mrs. Florida Lasier of Chicago snagged her silk stockings on a wild blackberry bramble while exploring the idyllic Smoky Mountain foothills, and Blackberry Farm was born. Thirty-six years later, the Beall family invested their hearts and souls in the same romantic site that became their family home and lifelong passion. Today, one of America’s most celebrated intimate luxury hotels beckons discerning guests who aspire to escape modern-day frenzy and slip into a Blackberry state of mind. Corsair Artisan Distillery
We make very small batches of spirits – just a few cases at a time – in our pot stills. Everything’s done by hand, from production to bottling. An emerging movement, craft distilleries are small scale operations similar to a microbrewery. These hands-on operations make spirits in small batches, often producing less in a year than larger distilleries bottle in an hour. The large continuous stills used by major producers are eschewed for hand-operated pot stills. Pot stills require more labor but allow the craft distiller fine control over flavors and give broad room for experimentation. This allows craft distillers to focus on local ingredients and unusual techniques to make small volume batches of high-quality spirits.
